  • 500g - Chicken breast
  • 2 tsp – ginger and garlic paste
  • ¼ tsp – salt
  • ½ tsp - red chilli or pepper powder
  • ¼ tsp – cinnamon powder
  • ¼ tsp – ginger powder (optional)
  • ½ tsp – oil
    Cashew nut Paste
  • 100 g – Cashew nuts
  • 2tbsp – milk
    For Garvey
  • 2 tbsp - oil
  • ½ tsp – cumin seeds
  • 2 – Bay leaves
  • 1 large – onion (paste)
  • 2 tsp – ginger and garlic paste
  • 4tsp - Curry powder
  • 80 g - Tomato puree
  • chilli powder to taste
  • Salt and pepper to taste Chopped fresh tomatoes without seeds for garnishing.Fresh coriander leaves are always welcomed. :-)

Chicken curry is the one of common delicacy non-vegetarian curry in India. It is having large amount of regional variation, with many variations on the basic chicken curry recipe. This recipe is one of the my special version which is coming from special spice. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices.

This chicken curry with cashew nut paste recipe features a thick sauce flavored with special spices which I did not buy from any Indian glossary shops. I bought in Tesco but I believe it can be found easily Europe. It looks like…

I read the ingredients of this spice packet and decided to make the chicken curry with cashew nuts. Definitely the concept is Indian style but after mixture this curry spices with the paste of cashew nuts gave really nice, sooth and tasty flavor. My final dish looks like…

Step 1

Lets start with some preparation; Make the smooth onion paste with little bit of water. I believe you will have ginger and garlic paste in your fridge, so take out from it. If not then make it 1:1 ratio which is the best or follow my preparation of “Ginger & Garlic Paste“. Keep all items aside for the further uses.

Step 2

Clean the cashew nuts and put in the hot water or in the hot milk for 15-20 minutes. When it will be softer then make the smooth paste of it with milk.

Step 3

For the marinating, cut the chicken in small cubes and put into the large bowl. Add the ginger and garlic paste, chilli powder, cinnamon powder, ginger powder, oil and salt. Mix all well and keep in the fridge for the 30 minutes with plastic foil.

Step 4

Heat the oil in the deep cooking pan; add the cumin seed and bay leaves. When the cumin starts splutter then add the onion paste and pinch of slat. Fry them on medium heat for next 5 minutes.

Add ginger and garlic paste to it and fry it for next 5 more minutes. After that add the marinated chicken and cook it with lid for next 5 minutes. Keep stirring it so that nothing will touch to the bottom of the pan.

Step 6

Add the 4 tsp of curry powder and red chilli or pepper powder. if you like spicy then it is a good time to add the chilli powder (adjust according to your taste). Mix all well with chicken and cook for next 6 more minutes with lid on. Keep stirring it in between.

Add the tomato puree into it. cook it for next 3 minutes without lid. keep stirring it slowly and softly.

Step 8

Add the cashew nuts paste, adjust the salt and pepper. If you would like to make more gravy then add some extra milk to it. Cook it on low flame for next 20 more minute.

Finally garnish with some chopped tomatoes and served with rice or chappati bread.
