  • 50 g – Cashew nuts
  • 3 tbsp - Milk
  • 400 g – Paneer
  • 2 tbsp – Butter or Ghee (clarified butter)
  • ½ tsp – Cumin seeds
  • 4-5 – Green cardamom pods
  • 3-4 - Cloves
  • 3-4 – Black peppercorn
  • 1 medium – Onion (sliced)
  • 2 tsp – Ginger and garlic paste
  • ½ tsp – turemeric powder
  • 500 g – Chopped tomatoes or puree
  • ¼ tsp- Red chilli powder (adjust the taste)
  • 1 tsp - Coriander power
  • 1/2 tsp – Garam Masala
  • 200 g - Fresh cream (40%)
  • Salt to taste
    To Garnish
  • 3 tbsp - Chopped Coriander leaves
  • 2tsp – fresh cream

Shahi paneer is a north Indian vegetrain dish. Is is paneer dish where paneers are cooked in a thick gravy  of cream, tomatoes, spices and chshew nuts. It is mainly eaten with chappati or other kind of Naan breads. Paneer is the basically Punjabi  word for cottage cheese, and shahi is the Persian term for royal. Due to its richness and taste, in indian it is always served in special occasions and consider as a  “Roayl dish” of the occasans.

Step 1

Cut the paneer into the thin triangle shape with very soft hand so that it will not break in pices. After that chopped the onion, ginger and garlic and keep all items on aside for later use.

Step 2

Warm the milk and soak the cashew nuts into for 10-15 minutes. Then by the help of any grinder or mashine make a smooth paste of it. Keep also aside for later use.

Step 3

Heat the ghee in a deep frying pan. Add cumin seeds, cardamom seeds, cloves and black peppercorn. Let the entire items splutter which will take few seconds. If you like you can add an inch of cinnamon stick to hot ghee as well.

Step 4

Add the sliced onion to the ghee. Fry  the onions on medium heat for around 4 minutes. After that add ginger, garlic and turmeric powder. Cook till onion turns translucent

Step 5

Add the chopped tomatoes and cook it with lid on for around 10 minutes so that it gets soft and tender. When it gets softer then makes the mixture cool down on room temperature and grind into a smooth mixture or paste. If you would like to make really luxurious and smooth mixture then drain it with the help of strainer so that all hard particles from dry spices and tomatoes will be out. I am using hand grinder.

Step 6

Put back the pan on medium heat and add the smooth mixture to it. Add coriander powder, garam masla powder and chilli powder (according to the taste). cook the mixture for next 2-3 more minutes on low flame.

Step 7

Now add the cashew nut paste and keep cooking the gravy on medium flame. If you feel gravy is really thick then it is a good time to add some milk into the gravy so that it can get right consistency. It would be always best t keep gravy not really thin.

Step 8

 Cook all for next 5 -6 more minutes on medium heat and then add the sliced paneer. After adding the panner  sthart cooking the gravy of low tempreature for next 3-4 more minutes.

Step 9

Finally add the fresh cream and chopped coriander into it and cook it for few more minutes. Keep little bit cream on side for garnishing.

Serve it hot with some basmati rice or Naan bread. Garnish with some chopped coriander and cream.

    regarding the panner some time i make at home but you can buy really fresh and good one at lipanska shop. Regarding cashew i have friend in brno who gives me on good price but normally i buy from normal supermarkets..
